It is a very easy recipe to make, just mix and melt. You will get 16 serves from this keto almond flour blondies recipe. One serving in the recipe card is one piece.

The blondies are best stored in the fridge and eaten within 1 week, or you can freeze them for up to 3 months.

Ingredients for Keto Almond Flour Blondies

  • ½ cup of Unsalted Butter, melted
  • 2 ounces (⅓ cup) of Natvia
  • 1 teaspoon of Baking Powder
  • 1 teaspoon of Vanilla Essence
  • 3.5 ounces (⅓ cup) of Sugar-Free Lemon Curd
  • 1 Lemon, zest only
  • 2 large Eggs
  • 1 ¼ cup of Almond Flour

How to Make Keto Almond Flour Blondies

  1. Preheat oven to 160C/320F.
  2. Line an 8x8in cake tin with parchment paper and set aside.
  3. In a mixing bowl add the melted butter, natvia, baking powder and vanilla and mix well.
  4. Add the Lemon Curd, zest and eggs and combine before adding the almond flour.
  5. Spoon the mixture into your prepared cake tin and spread evenly.
  6. Bake for 25-30 minutes
  7. Leave to cool for 20 minutes before slicing into 16 pieces and enjoying.
