This super easy broccoli rice recipe is full of flavor and perfect for a healthy diet. Whether keto, low-carb, paleo, or vegetarian, it makes the perfect side dish.
Note: The recipe is not suitable for frozen broccoli. Fresh is best.
This Broccoli Rice recipe makes four servings. 1 serving is approximately 100g/3.5oz and has 4g net carbs.
Broccoli Rice Ingredients
- 1.2 pounds of Broccoli, two medium heads
- 2 tablespoons of Salted Butter
- ½ teaspoon of Salt
- ¼ teaspoon of Pepper, ground
How to Make Broccoli Rice
- Cut the broccoli into small florets and the stalk into small pieces. Ensuring that you trim off any brown edges from the stalk.
- Place the broccoli into your food processor and blend until it resembles the texture of rice. You may need to do this in a couple of batches to avoid overloading your food processor.
- Place a large nonstick pan over medium-high heat. Add the butter, then the broccoli rice once the butter has melted.
- Season with salt and pepper.
- Saute, stirring often, for about 5-7 minutes until the broccoli has softened and is cooked through.
- Serve hot.
