I have found you can substitute almost any fat for the butter. I’ve tried using sour cream, buttermilk, cream cheese, even mayonnaise, and they all work!
Just made a batch using Stonemill Kitchens Parmesan, Artichoke, and Jalapeno premium dip. Delicious!
I double the recipe and use two 4-1/2 inch high by 1-3/4 inch tall ceramic ramekins. If you fill these with one inch of the batter and microwave each for 3 minutes (separately), you will get two 4-1/2 inch “muffin tops.” Slicing these off make a perfect bun for hamburgers, egg sandwiches or whatever filling suits your fancy. The bottoms can be sliced thick or thin and make really good toast.
Tips: pulse the eggs and fat together in a blender before adding to the dry ingredients and whisk together to get a really smooth batter. After filling the ramekins, tap a few times on the counter to settle the batter before putting in the microwave.
