  • 1.1 pounds (4 fillets) of White Fleshed Fish
  • 8 tablespoons of Lemon Chive Butter
  • 1 Lemon, sliced
  • 1 teaspoon of Salt
  • ½ teaspoon of Pepper, ground
  • 1 tablespoon of Chives, finely chopped

How to make Lemon Butter Fish Parcels
  1. Preheat your oven to 200C/390F.
  2. Cut 4x 10in square of aluminum foil. Line each with a small square of parchment paper.
  3. Pat each fish fillet dry with a paper towel.
  4. Place the fish pieces on the parchment paper, and top each with two tablespoons of Lemon Chive butter, two slices of lemon, and a sprinkling of salt and pepper.
  5. Bring two ends of the foil together and fold them together. Fold in the sides to form a parcel around the fish.
  6. Bake for 10-15 minutes, depending on the thickness of your fish fillets.
  7. Allow sitting for 2 minutes before gently unfolding the parcels. Beware of the hot steam.
  8. Sprinkle with chives and serve with a side of Fall Green Bean Salad.
