Keto Blueberry Baked Oatmeal Ingredients
- 1 cup of Unsweetened Shaved Coconut
- ⅔ cup of Coconut Flour
- ⅓ cup of Golden Flax Meal
- 1 teaspoon of Baking Powder
- ½ cup of Sugar-Free Maple Syrup
- 2 teaspoons of Vanilla Extract
- 1 Lemon, zested
- ⅔ cup of Coconut Cream
- 1 cup of Unsweetened Almond Milk
- 1 cup of Blueberries
How to Make Keto Baked Oatmeal
- Preheat your oven to 160C/320F.
- In a mixing bowl, add the shaved coconut, coconut flour, flax meal, and baking powder. Mix together.
- Add the remaining ingredients, except the blueberries and mix well.
- Gently fold through the blueberries and spoon the mixture into a greased casserole dish, and smooth out the top.
- Baked for 25-30 minutes until the top is just starting to brown.
- Remove from the oven and serve warm with extra Sugar-Free Maple Syrup.
