Keto Buffalo Chicken Sliders Ingredients
- 1 tablespoon of Olive Oil
- 1.5 pounds of Chicken Thighs
- ½ teaspoon of Salt
- ½ teaspoon of Pepper, ground
- ⅔ cup of Chicken Stock
- 1 tablespoon of Ranch Spice Mix
- ⅓ cup of Hot Sauce
- 1/4 cup of Butter, melted
- 12 Keto Dinner Rolls
- 1 1/2 cups of Keto Coleslaw
- 4 ounces of Blue Cheese, crumbled
How to Make Keto Buffalo Chicken Sliders
- Set your Instant Pot to saute. Once heated add the oil and brown the chicken thighs in batches, and season with salt and pepper.
- Once the chicken is browned, cancel the saute function and add the chicken stock. Gently scrape any crispy bits off the bottom.
- Add all the chicken back in and sprinkle over the ranch mix.
- Put the lid on your Instant Pot and set on high pressure for 10 minutes. Use the quick-release method before removing the lid.
- Add the chicken to a bowl and shred with 2 forks, then add the hot sauce and butter. Mix well.
- Slice the Keto dinner rolls in half, to the bottom bun; add the shredded buffalo chicken, some Keto Coleslaw, crumble over blue cheese and top with the other half of the bun.
- Serve immediately!
