Our Colcannon recipe makes four generous servings. One serving has 2g net carbs.

Store any leftover Keto Colcannon in the fridge for up to 4 days. We don’t recommend freezing it.

Keto Cauliflower Colcannon Ingredients – sauteed in a frying pan
  • 1 pound of Cauliflower, cut into florets
  • 5 ounces of Cabbage, finely shredded
  • 2 Scallions, thinly sliced
  • 2 tablespoons of Chives
  • 2.5 ounces of Butter
  • 1 teaspoon of Pepper
  • 1 teaspoon of Salt

How to make Keto Cauliflower Colcannon. This easy side dish recipe is inspired by the Irish. It's a healthy, gluten free vegetable dish that everyone loves.
How to make Keto Cauliflower Colcannon
  1. Cook the cauliflower in a pot of boiling water for 5 minutes or until it is tender. Drain well and blend in a food processor with the salt and pepper.
  2. Melt half of the butter in a frying pan over medium heat, add the cabbage and saute for 3 minutes.
  3. Add the scallions and chives and saute for 2 minutes. Reduce the heat to low.
  4. Pour the mashed cauliflower into the pan and mix well. Adjust seasoning to taste.
  5. Serve Cauliflower Colcannon with the remaining butter melting over the top.

Ingredients

  • 1 pound Cauliflower
  • 5 ounces Cabbage finely shredded
  • 2 Scallions thinly sliced
  • 2 tablespoon Chives finely chopped
  • 2.5 ounces Salted Butter
  • 1 teaspoon Pepper ground
  • 1 teaspoon Salt

Instructions
