Ingredients

  • 1.8 pounds Cauliflower
  • 3 ounces Butter
  • 3.5 ounces Cheddar Cheese shredded
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  • Preheat oven to 200C/390F.
  • Boil a saucepan two-thirds full of water.
  • Add the cauliflower and cook for 10 minutes, or until the cauliflower is tender.
    1.8 pounds Cauliflower
  • Drain the cauliflower well then return to the saucepan.
  • Add the butter. Blend the cauliflower into a puree using a stick blender.
    3 ounces Butter
  • Add half the cheese and blend until melted and mixed through.
    3.5 ounces Cheddar Cheese
  • Add the salt and pepper and blend again.
    1 teaspoon Salt, 1/2 teaspoon Pepper
  • Spoon into a casserole dish and top with the remaining cheddar.
    3.5 ounces Cheddar Cheese
  • Bake for 15-20 minutes, until the cheese is melted and browned.
  • Serve and enjoy.
