Ingredients
- 1 head of cauliflower, cut into florets
- 3 ounces butter
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- ½ teaspoon pepper
How To Make Keto Cauliflower Cheese Mash
- Cook the cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10 minutes. Drain well.
- Mash the cauliflower: Return the cauliflower to the pot and add the butter. Mash with a potato masher or use an immersion blender until smooth.
- Add the cheese: Stir half the cheddar cheese until melted and smooth—season with salt and pepper to taste.
- Brown the cheese: Transfer the mash to a baking dish and top with the remaining cheddar cheese. Broil for a few minutes or until the cheese is melted and bubbly.
Tips For The Best Keto Cauliflower Mash
- Don’t overcook the cauliflower. Overcooked cauliflower will become watery and mushy.
- Use a good quality cheese. A sharp cheddar cheese will give the best flavor.
- Season to taste. Add salt and pepper to your liking.
- For an extra creamy mash, use full-fat cream cheese or heavy cream.
