  • 8 ounces Cream Cheese
  • 1 cup Butter
  • 1 cup Heavy Cream
  • 2 cups mozzarella cheese

Instructions

  • In a saucepan, place the cream cheese, butter and heavy cream and place over low heat.
    8 ounces Cream Cheese, 1 cup Butter, 1 cup Heavy Cream
  • Continue stirring until the cream cheese has melted and all ingredients are combined.
  • Add the mozzarella cheese and whisk continuously until it is melted and fully combined.
    2 cups mozzarella cheese
  • Use the sauce immediately, or store in the fridge. Reheat over low heat, whisking continuously.

STORING: You can keep it in the fridge for a few days, but his sauce is best made fresh and served immediately. 
TIPS: Just be sure when you’re choosing the cream cheese for this cheese sauce that you select “full cream.” Avoid any no-fat or skim cream cheese. You want your sauce to be low-carb, not low-fat.

    Yummy! Second time making I dissolved 1.5 tsp sodium citrate in a bit of warm cream and added to pot. Made it much less stringy/clingy and more pourable. Also increased cream by 1/2 cup to thin a little bit. So, so good!

  2. I am making this ahead of time in a casserole. Will this reheat nicely in the oven after being in the refrigerator mixed into casserole?

    • Not sure about that, Debbie. you can try but the parmesan will definitely change the consistency. But it may work. There’s only one way to find out.

    This was delicious!! I added a little bit of salt, pepper and some nutmeg to make it taste more like a bechamel. I poured it over some steamed cauliflower, added some Trader Joe’s shredded emmental/swiss cheese mix and baked it in the oven at 400F for 15 mins. Delicious!!

      I froze it in very small containers (maybe 1/4 to 1/2 c) and it did fine. As it thaws and I reheat it, I do it a lot of stirring. It worked great for me to freeze it. I take out one of my little containers, thaw it, stir it and eat it with my chicken or whatever. The sauce is very thick and I may try something to thin it a little, but it is so good!

    Oh My YUMMMMMMM!!!!
    This recipe is AMAZING! So simple and oh so tasty! Admittedly I did fudge a few quantities but the whole experience was just PERFECT! Definitely adding this to my recipe repotoire! Thank you so much for this recipe!
    After beginning my low carb journey 13 months ago (and reaping the benefits of 22 kg weight loss in the first 6 months and most importantly a reduction of the inflammation in my osteoarthrititic knees) I desperately needed a low carb cheese sauce for my cauliflower au gratin. Itโ€™s winter time and what better comfort food is there than cream cheese, cheese, cream and butter. Not to mention more cheese grilled on the top lol.
