  • Versatile. Change the flavor of the chocolate for different colors and flavors. Decorate with melted chocolate or keto-friendly nuts.

This recipe makes 7 servings. One serving is 1 Keto ice cream bar (our molds hold 1/3 cup per popsicle) and has 2g net carbs.

Store keto ice cream bars in the freezer for up to three months. I recommend keeping them covered in a silicone mold, but if you don’t have enough room, pop them into ziplock bags.

Ingredients and substitutions

  • Heavy cream
  • Almond milk. Unsweetened and unflavored almond milk to keep the carbs low.
  • Erythritol. Use the granulated type. You can also use monk fruit if you prefer.
  • Sugar-free dark chocolate. Chocolate chips work best for melting or do as we did here and break up a block into small chunks so that it melts through evenly.

Recipe tip: Add a scoop of MCT powder if you want a softer ice cream bar.

Step 1. Heat

Place a saucepan over medium heat, and add the cream, almond milk, and erythritol. Whisk together and bring to a simmer.

Step 2. Melt chocolate

Add the chocolate to a heatproof bowl and pour the hot cream mixture over it. Allow to sit for a minute before mixing. Continue mixing until all the chocolate has melted and combined into the cream mixture.

Step 3. Pour into molds

Pour the mixture into silicone popsicle molds, place it on the lid, and put wooden popsicle sticks in the holes.

We bought the ice cream molds and popsicle sticks on Amazon. But a lot of two-dollar shops and catering suppliers have them.

Step 4. Freeze and serve

Freeze for at least 3 hours until frozen solid. Remove the ice cream bars from the molds. Enjoy your keto ice cream bar as they are, or drizzle them with melted sugar-free white chocolate for something.

Variations to this recipe

  • Decorate. You can decorate your keto ice cream bars with melted sugar-free vanilla chocolate as we have (see pics).
  • Shaved chocolate and nuts. Dip the ends of the ice cream in crushed almonds, macadamias, or shaved chocolate.
  • Swap chocolate. Try using sugar-free vanilla chocolate instead of dark chocolate (read the nutrition label for carb content.

      No, you don’t, but MCT powder helps the ice cream to stay soft. You can leave it out if you want, but your ice cream will freeze hard.
