For The Dough

  • Mozzarella cheese: Pre-shredded, low-moisture mozzarella works best.
  • Natural sugar substitute: I like monk fruit the best but erythritol or allulose also works well.
  • Almond flour: Blanched fine almond flour for best results.
  • Cream cheese: Softened, full-fat cream cheese.
  • Eggs: I use large free-range eggs at room temperature.
  • Baking powder: Gives the dough air to make it light and fluffy.

For The Filling

  • Melted butter: I always buy grass-fed butter but any salted butter will work.
  • Natural brown sugar substitute: I like to use brown erythritol monk fruit sweetener called Lakanto Gold, but the brown version of Swerve and brown erythritol substitute works well, too.
  • Cinnamon: The star of the show!

For The Cream Cheese Frosting (Frosting is optional. I love them plain; they remind me of a hot cinnamon donut)

  • Cream cheese: The base of the frosting.
  • Butter: Softened no added salt butter.

  1. Prep the ingredients:
    • Whisk dry ingredients (almond flour, baking powder, sweetener) in a small bowl.
    • Melt mozzarella and cream cheese in a pan on the stove over medium heat or in the microwave in 15-second intervals, stirring until mixed, then whisk until smooth.
  2. Make the dough:
    • Combine melted cheeses, eggs, and dry ingredients in a food processor until smooth.
    • Roll dough into a rectangle, brush with melted butter and sprinkle with filling ingredients.
    • Roll into a log, slice into 12 rolls, and place in a greased baking dish.
  3. Bake:
    • Bake at 350°F (180°C) for 20-25 minutes or until golden brown.
  4. Frost and serve:
    • While the rolls bake, prepare frosting by whisking together the ingredients.
    • Frost warm rolls and enjoy!

Expert Tips For Keto Cinnamon Roll Success

  • Oiling your hands prevents the sticky dough from sticking. Mild olive oil, coconut oil, etc works well (just a little).
  • Keep the dough warm. This makes the dough easier to work with.
  • Don’t overbake the rolls. They should be fluffy in the middle. Check at the 15-minute mark with a skewer. If the skewer comes out dry, they’re done.
  • Add vanilla extract: A couple of drops of vanilla extract in the frosting gives a nice little touch.
