  • 1 ½ cups of Coconut Milk, full fat
  • ½ cup of Erythritol
  • ⅓ cup of Coconut Flour
  • 2 large Eggs
  • 1 teaspoon of Vanilla Essence

How to make Keto Coconut Macaroons
  1. Preheat oven to 175C/350F. Prepare a large cookie sheet by lining it with parchment paper.
  2. Add all ingredients to a large mixing bowl. Mix well into a thick batter.
  3. Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.
  4. Bake for 15-20 minutes, until lightly browned.
  5. Leave to cool on the tray.
  6. Enjoy your cooled cookies or store in an airtight container for later.

    Delicious! I substituted coconut milk for half the amount of coconut cream and the other half water. Shared with my coworkers and it was a huge hit!

    I really enjoyed these cookies. For whatever reason my cookies flattened out a lot, and required longer baking. Perhaps a measuring mistake on my part, or because I substituted pineapple extract and an orange ZipFizz for the vanilla. At any rate, they were delicious. Thanks!
