- ½ cup of Erythritol
- ⅓ cup of Coconut Flour
- 2 large Eggs

- Preheat oven to 175C/350F. Prepare a large cookie sheet by lining it with parchment paper.
- Add all ingredients to a large mixing bowl. Mix well into a thick batter.
- Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.
- Bake for 15-20 minutes, until lightly browned.
- Leave to cool on the tray.
