This Keto mustard pork casserole recipe makes ten servings.
Ingredients for Keto Mustard Pork Casserole
- 4 ounces of Butter
- 1 medium Onion, diced
- 1 tablespoon of Thyme, fresh
- ½ teaspoon of Salt
- 2 pounds of Pork Shoulder, diced
- 3 tablespoons of Whole Grain Mustard
- 8 ounces of Chicken Stock
- 11 ounces of Sour Cream
- 14 ounces of Mushrooms, quartered
- 3 tablespoons of Fresh Basil, finely sliced
For a little extra kick in your stew, try adding a pinch of chili flakes to your pork casserole ingredients.
How To Make Keto Mustard Pork Casserole
- Place a large saucepan over medium heat and add the butter, onion, thyme, and salt.
- Saute for 5 minutes until the onion begins to turn translucent.
- Add the diced pork and cook for 5 minutes, until the pork has started to color.
- Add the seeded mustard, chicken stock, and sour cream, and bring to a simmer.
- Simmer for 20 minutes before adding the mushrooms. Stir well.
- Continue to simmer for 40-60 minutes, until the pork is tender and the sauce has thickened.
- Remove from the heat, add the fresh basil and stir through.
- Serve and enjoy.
