Keto Cucumber Salad Ingredients
- 2 Cucumbers
- 2 tablespoons of Sesame Oil
- 1 tablespoon of Unseasoned Rice Vinegar
- 2 teaspoons of Tamari Sauce
- ½ teaspoon of Garlic Powder
- Salt, to taste
- ½ teaspoon of Erythritol, optional
- 1 tablespoon of Sesame Seeds, toasted
How to Make Cucumber Noodle Salad
- Using a Spiralizer, spiralize the cucumbers into “noodles” and place on paper towel for 5 minutes to soak up some of the water.
- In a small bowl, add the sesame oil, vinegar, tamari, and garlic powder. Whisk together, taste and add salt and sweetener if desired.
- Place the cucumber noodles into a serving bowl and drizzle over the dressing.
- Toss to coat.
- Serve sprinkled with sesame seeds.
