Keto Dirty Rice Ingredients
- 1 tablespoon of Olive Oil
- 2 cloves of Garlic, finely chopped
- 1 small Onion, diced
- 1 stick of Celery, diced
- ½ Green Pepper, diced
- 1 teaspoon of Salt
- 8 ounces of Ground Beef
- 8 ounces of Ground Pork
- 3 teaspoon of Homemade Cajun Spice
- 3 cups of cauliflower, riced
- ¼ cup of Chicken Stock
- 1 ounce of Salted Butter
- 1 Scallion, sliced
How to Make Keto Dirty Rice
- Place a large nonstick frying pan over high heat. Add the oil, garlic, onion, and celery. Saute for 2 minutes.
- Add the green pepper and salt. Saute for another minute.
- Add the ground beef and pork, and break up. Saute until browned and cooked through.
- Add the cajun spice and mix well, then sprinkle over the cauliflower rice. Leave it to steam for 1 minute, then add the stock.
- Saute, while stirring for 5-8 minutes, until the cauliflower rice is cooked through.
- Turn off the heat and add the butter. Allow to melt then stir through.
- Sprinkle with scallions and serve hot.
