  • 1 tablespoon of Olive Oil
  • 2 cloves of Garlic, finely chopped
  • 1 small Onion, diced
  • 1 stick of Celery, diced
  • ½ Green Pepper, diced
  • 1 teaspoon of Salt
  • 8 ounces of Ground Beef
  • 8 ounces of Ground Pork
  • 3 teaspoon of Homemade Cajun Spice
  • 3 cups of cauliflower, riced
  • ¼ cup of Chicken Stock
  • 1 ounce of Salted Butter
  • 1 Scallion, sliced

How to Make Keto Dirty Rice

How to make Keto Dirty Rice
  1. Place a large nonstick frying pan over high heat. Add the oil, garlic, onion, and celery. Saute for 2 minutes.
  2. Add the green pepper and salt. Saute for another minute.
  3. Add the ground beef and pork, and break up. Saute until browned and cooked through.
  4. Add the cajun spice and mix well, then sprinkle over the cauliflower rice. Leave it to steam for 1 minute, then add the stock.
  5. Saute, while stirring for 5-8 minutes, until the cauliflower rice is cooked through.
  6. Turn off the heat and add the butter. Allow to melt then stir through.
  7. Sprinkle with scallions and serve hot.
