Our Keto Ham & Mayonnaise Scrolls are a delicious savory baked treat. They make a great lunch or cheesy snack, why not heat one up for breakfast too!
If you are in Australia, you might recognize these flavors from a popular bakery chain. They are the low carb version of the “Ham & Mayo Twirl” – one of my faves when I worked there as a teen.
This Low Carb Ham & Mayonnaise Scrolls recipe makes 12 serves. 1 serving is 1 scroll which has 3g net carbs.
Store leftover Keto Ham & Mayonnaise Scrolls in the fridge for up to 1 week, or frozen for up to 3 months.
Keto Ham & Mayonnaise Scrolls Ingredients
- 2 teaspoons of Dried Yeast
- 1 teaspoon of Inulin
- 2 tablespoons of Warm Water
- 11 ounces of Mozzarella Cheese, shredded
- 2 ounces of Butter
- 5.5 ounces of Almond Flour
- 2 teaspoons of Xanthan Gum
- ½ teaspoon of Salt
- 2 large Eggs
- ⅓ cup of Low Carb Mayonnaise
- 4 slices of Ham
- 4 ounces of Cheddar Cheese, shredded
How to Make Keto Ham & Mayonnaise Scrolls
- In a small bowl, add the yeast, inulin and warm water. Stir and set in a warm place to activate.
- Place the mozzarella and butter into a small saucepan and place over low heat, stirring often, until completely melted.
- While the cheese is melting, add the almond flour, xanthan gum, and salt into a large bowl. Mix well.
- Add the activated yeast and eggs into the almond flour, mix lightly, then add the melted cheese.
- Mix with a spoon until cool enough to handle, knead with hands until a smooth dough is formed.
- Roll the dough between 2 sheets of parchment paper into a rectangle shape 5mm/0.25in thick.
- Spread ¾’s of the dough with the mayonnaise, top with the ham, and half the cheddar.
- Roll the dough from one of the long sides to the other, gently pressing together.
- Gently cut into 12 pieces using a serrated knife, set onto a lined cookie sheet and leave in a warm place for 20 minutes.
- Preheat your oven to 175C/390F.
- Sprinkle the scrolls with the remaining cheddar. Bake for 20-25 minutes until golden brown.
- Leave to cool for 10 minutes before enjoying.

Hi is the inulin necessary to the recipe or added for nutrition? Just wondering as I dont have it on hand

The inulin is used as the food for the yeast (to help it rise) and helps make the scrolls more breadlike. I don’t recommend leaving it out.
