- Meatball Ingredients
- 8 ounces of Ground Pork
- 8 ounces of Ground Beef
- 1 large Egg
- ¼ cup of Parmesan, finely grated
- 2 teaspoons of Dried Basil
- 2 teaspoons of Garlic Powder
- 2 teaspoons of Dried Oregano
- 2 teaspoons of Dried Parsley
- Soup Ingredients
- 2 tablespoons of Olive Oil
- 1 small Onion, finely diced
- 2 cloves of Garlic, crushed
- 8 ounces of Mushrooms, sliced
- 6 cups of Chicken Stock
- 2 cups of Fresh Spinach, chopped
- Salt, to taste
How to Make Keto Italian Wedding Soup
- Place all the meatball ingredients into a mixing bowl. Mix well.
- Roll into tiny meatballs, about the size of 2 teaspoons.
- Place the olive oil into the base of a large nonstick saucepan over medium-high heat, add the meatballs and brown.
- Remove the browned meatballs from the saucepan and set aside.
- Add the onion, garlic, and mushrooms to the saucepan and saute, until the mushrooms have softened.
- Add the chicken stock and simmer for 10 minutes.
- Return the meatballs to the soup and simmer for 5-10 minutes until cooked through.
- Stir through the spinach and remove from the heat. Add salt to taste.
- Serve immediately.
