- 4 large Eggs separated
- 1/3 cup of Unsalted Butter, melted
- ⅓ cup of Lemon Juice
- 1 cup Unsweetened Almond Milk
- ½ cup of Heavy Cream
- ¾ cup of Almond Flour
- ½ cup of Erythritol, granulated
- ½ teaspoon of Baking Powder
- 1 Lemon, zest only
How to Make Keto Lemon Delicious
- Preheat your oven to 160C/320F.
- In a large mixing bowl, add the egg yolks, butter, lemon juice, almond milk, and cream. Whisk together.
- Add the almond flour, erythritol, baking powder, and lemon zest. Whisk well and set aside.
- Place the whites into another mixing bowl, and using a hand mixer, whip to soft peaks.
- Fold the egg whites into the egg yolk mixture, a third at a time, until mixed in.
- Place 6 x 1 cup capacity ramekins into a deep roasting pan.
- Ladle the mixture evenly between the ramekins and fill the surrounding pan with boiling water until it reaches halfway up the ramekins.
- Bake for 25-35 minutes until the centers jiggle slightly when moved.
- Remove the ramekins from the pan and allow them to sit for 15 minutes before eating.
- Serve your desserts warm or place in the fridge and eat them cold.
