These keto marshmallows are fluffy pillows of joy, they are super light and low carb with a sweet vanilla flavor.
These Low Carb Marshmallows are not suitable for toasting and will melt when heated, which makes them perfect for adding to your Keto Hot Chocolate. They don’t fit the Ketogenic macros alone, and are best served with something fatty like a Keto Sundae with Chocolate Ice Cream, and Fudge Sauce!
To dust or not? I found that dusting with powdered sweetener causes small amounts of crystallization on the outside edges, if your marshmallows are becoming sticky a little dusting will help (making marshmallows in dry conditions will prevent stickiness).
Sugar-Free Marshmallows Ingredients
- 1 cup of Water
- ¼ cup of Natvia
- 3 tablespoons of Gelatin Powder
- 1 teaspoon of Vanilla Essence
How to Make Sugar-Free Marshmallows
- Before you start, ensure that you can devote 20 minutes of your time to this recipe, it needs your full attention as the gelatin sets very quickly.
- Prepare a 9in square cake pan by lining with parchment paper. Set aside.
- Place half the water and all the sweetener into a small saucepan over high heat. Bring to the boil.
- In your stand mixer, add the remaining water and sprinkle over the gelatin. Immediately add the boiled water mixture. Give it a quick mix with a spoon to help the gelatin dissolve.
- Whisk on high speed for 10-15 minutes, until the mixture is a glossy white color and has formed soft peaks.
- Gently and quickly scoop the mixture into your prepared pan and smooth the top.
- Leave to set for 4 hours at room temperature.
Once set, remove the parchment from the pan and gently pull the sides flat. - Spray your knife with coconut oil before gently cutting the marshmallow into 6 thick slices using a slight drag (to break through the top) then press motion (to cut all the way through). You will need to keep spraying coconut oil onto the knife before making each cut to prevent the marshmallow from sticking.
- Cut each strip into squares.
- Enjoy as-is, add to your Hot Chocolate or make Keto Smores (recipe coming soon!!).

How To Store Marshamallows
Store homemade marshmallows in the pantry in an airtight container for up to one week, marshmallow is not suitable for freezing.
