This simple Keto Rice Pudding is a sweet and decadent dessert that’s made using cauliflower! It’s delicious, flavored with vanilla and cinnamon.

This Keto Rice Pudding recipe makes 4 serves. 1 serving is ¾ cup which has 4g net carbs.
Store leftover Keto Rice Pudding in the fridge for up to 3 days. We don’t recommend freezing.
Keto Rice Pudding Ingredients
- 1 cup of Unsweetened Almond Milk
- 1 cup of Heavy Cream
- ⅓ cup of Natvia Sweetener
- 1 teaspoon of Vanilla Essence
- 12 ounces of Cauliflower Rice, raw
- 3 Egg Yolks
- 1 teaspoon of Cinnamon, ground
How to Make Keto Rice Pudding
- Place a saucepan over medium heat and add the almond milk, cream, sweetener and vanilla. Mix well.
- Bring to a simmer and add the cauliflower rice. Simmer uncovered for 10 minutes, then remove from the heat.
- Add the egg yolks to a bowl and whisk together. Ladle a small amount of the rice pudding into the yolks while whisking to temper the eggs, whisk in a second ladleful.
- Pour the egg mixture into the saucepan and whisk well. Place back over medium heat and simmer while stirring for 5 minutes.
- Remove from the heat and sprinkle with cinnamon. Serve warm or cold.

tastes delicious but the pudding never thickened as much as I would have liked, maybe I need to cut the liquid down or add more cauliflower. i know how to cook and was looking for a thicker pudding… maybe another egg yolk? Thank you!

The pudding will thicken up more as it cools, if you want a thicker warm pudding then try adding half the almond milk and see how that goes. You can always add it back in if your pudding gets too thick!

I think it would work well, it might just need to cook a bit longer as frozen cauliflower can be a bit watery.
