We like to make these keto sausage rolls in bulk and keep them unbaked and ready to be cooked when we want them.
This keto sausage roll recipe makes 18 servings. One serving is one sausage roll and has 1g net carbs.
This recipe calls for 50/50 ground beef/ground pork. If you don’t have or can’t eat ground pork, you can use 100% ground beef. However, that will change the flavor and texture slightly.
Keto Sausage Rolls Ingredients
You can experiment with the keto sausage rolls ingredients by adding a line of cheese on top of the meat, maybe some bacon, or your favorite herbs.
- Sausage Filling
- 1 tablespoon of Olive Oil
- 1 small Onion, finely chopped
- 2 cloves of Garlic, finely chopped
- 1 teaspoon of Fresh Thyme, finely chopped
- 7 ounces of Ground Pork
- 7 ounces of Ground Beef
- 4 teaspoons of Psyllium Husk
- 2 teaspoons of Dried Oregano
- 1 teaspoon of Salt
- Pastry Ingredients
- 6 ounces of Mozzarella Cheese, grated
- 1 ounce of Butter
- 3 ounces of Almond Flour
- 1 teaspoon of Xanthan Gum
- ½ teaspoon of Salt
- 1 large Egg

How to Make Keto Sausage Rolls
- Preheat your oven to 160C/320F. Line a cookie sheet with parchment paper and set it aside.
- Add the oil, onion, garlic, and thyme in a small frying pan. Place over medium heat and saute for 5 minutes or until softened. Set aside to cool.
- In a mixing bowl, add the pork, beef, psyllium husk, oregano, and salt, followed by the cooled onion mixture. Mix well and set aside.
- Place the mozzarella cheese and butter into a small saucepan over low heat. Melt completely.
- In a mixing bowl, add the almond flour, xanthan gum, and salt. Mix well.
- Add the melted cheese mixture, followed by the egg, and knead into a smooth dough.
- Roll the dough between 2 pieces of parchment paper into a rectangle 30cm/12in wide and 5mm/0.25in thick.
- Cut the rectangle in half lengthways.
- Spread half the meat mixture down the center of each dough rectangle.
- Gently roll up, ensuring that the seam is on the bottom. Cut each log into 9 pieces.
- Place the pieces onto your prepared cookie sheet, leaving a small gap between each.
- Bake for 20-25 minutes until the pastry is golden brown and the rolls are firm.
- Enjoy hot with a side of Sugar-Free Ketchup.

A few weeks ago whist out I saw the tastiest looking sausage rolls ever and wanted some . When I found this recipe I was super excited so I made them last week but I added some black pudding and keto sweet chili sauce like the ones in the restaurant. We always specify the serving size in the post, often above the ingredient list, so that should be able to assist you with any of our other recipes ๐

Can I change mozzarella for cheddar

I don’t recommend it as cheddar has a higher fat content and doesn’t have the stretchiness that mozzarella does.
How important is the Xantham Gum to the pastry? That’s the only ingredient I’m missing!

The xanthan gum acts like gluten and is essential to keep the pastry together, I don’t recommend leaving it out ๐
I made these for my mum whom both her & I are on the Keto way of life. I’m a vegetarian and had a taste of the pastry (will be using it for a quiche base) and it’s beautiful. The sausage roll it’s self has gone down very well with mum & other family members. I don’t know if you can but I’m going to freeze one, let it defrost fully & reheat and see how that turns out.
