Keto Soft Serve Ice Cream Ingredients
- 3 cups of Heavy Cream
- 2.5 ounces (⅓ cup) of Xylitol
- 2 ounces (¼ cup) of Erythritol, granulated
- 2 scoops of MCT Powder, unflavored
- 2 teaspoons of Vanilla Essence
- 1 teaspoon of Gelatin Powder
How to Make Keto Soft Serve Ice Cream
- Place 1 cup of the cream into a small saucepan along with all the other ingredients. Whisk together and heat until the sweeteners have dissolved.
- Place in the fridge and chill for 30-60 minutes until the mixture is lukewarm to body temperature. Avoid completely chilling as this will set the gelatin.
- In a large mixing bowl, add the remaining 2 cups of cream. Whip, using a hand mixer, to firm peaks.
- Gently fold in the cooled cream mixture, a small amount at a time, until fully combined.
- Pour into a freezer-safe loaf pan that has been lined with parchment paper. Cover and place into the freezer.
- Freezing times will depend on the size of the dish and your freezer. We have found that the ice cream reaches a perfect consistency between 8-12 hours of freezing. After this period the ice cream will slowly reach the firmness of regular ice cream, leaving it out for 30 minutes at room temperature will soften it.
- For the ultimate soft serve experience, remove your ice cream from the freezer and scoop into a piping bag with a star nozzle tip. Pipe into glasses and enjoy!
