- ¾ cup of Almond Flour
- ¼ cup of Golden Flax Meal
- 2 tablespoons of Erythritol
- 2 tablespoons of Unsalted Butter
- 1 large Egg
- Filling Ingredients
- 1 cup of Heavy Cream
- ½ cup of Unsweetened Almond Milk
- ½ cup of Erythritol
- 1 teaspoon of Vanilla Extract
- 2 teaspoons of Xanthan Gum
- ¼ cup of Unsalted Butter
- Pinch of Cinnamon, ground
- Pinch of Nutmeg, ground
How to Make Keto No Sugar Cream Pie
- Preheat your oven to 160C/320F.
- In a bowl, add the crust ingredients and mix well.
- Press the crust mixture into the base and up the sides of a shallow 9-inch pie plate.
- Bake for 10-12 minutes until set. Set aside to cool.
- Place the heavy cream, almond milk, erythritol, and vanilla into a saucepan over medium heat and bring to a simmer.
- Sprinkle over the xanthan gum and whisk until the mixture is thick and bubbling.
- Remove from the heat and stir through the butter.
- Pour the filling mixture into the cooked crust and smooth it out. Sprinkle over the cinnamon and nutmeg.
- Bake the pie for 30-40 minutes until the filling is bubbling and lightly browned.
- Leave the pie to cool at room temperature for 30 minutes before placing it in the fridge to cool completely.
- Cut your chilled pie into 12 slices and serve.
