This Keto Tabbouleh Salad is a traditional Lebanese recipe with a low carb twist, we’ve swapped out the wheat for cauliflower.
When chopping herbs ensure your knife is sharp, a blunt knife will bruise the herbs and they will deteriorate much quicker.
How do we use Low Carb Tabbouleh? I prefer it more as a condiment rather than a side salad, adding into our Keto Chicken Doner Kebab or mixing into our Egg Salad. There’s only so much parsley I can enjoy before it becomes overpowering.
Keto Tabbouleh Salad Ingredients
- ½ cup of Cauliflower Rice, raw
- 1 Tomato, seeded and diced
- 3 cloves of Garlic, finely chopped
- 4 Scallions, thinly sliced
- 1 ½ cup of Parsley, finely chopped
- ⅓ cup of Mint, finely chopped
- 2 tablespoons of Lemon Juice
- ¼ cup of Olive Oil
- ½ teaspoon of Salt
- ¼ teaspoon of Pepper, ground
How to Make Keto Tabbouleh Salad
- Place all the ingredients into a mixing bowl. Mix well.
- Set aside for the flavors to infuse for 5-10 minutes.
- Serve.

We recommend making our Low Carb Tabbouleh fresh, leftovers can be stored in the fridge for up to 2 days. It is not suitable for freezing.

After 18mths on keto and loosing 40kg, I am finding it very hard to stay in ketosis.
The weight is piling back on fast so am being very careful with serving size. But I am very tired and prone to eating too big a serve.
How many side serves of various salads on the one plate would make one meal? I like a combo of salads rather than just one serving of a main meal recipe.
