These Keto Broccoli and Bacon Croquettes are bursting with delicious bacon and cheese as well as healthy broccoli for fiber.
There are so many people who will avoid broccoli at all cost, but it doesn’t have to be the case just add bacon and cheese and evryone will love it.
This recipe makes 14 croquettes or 14 servings, the recipe card reflects 1 serving which is 1/14 of the total recipe.

Keto Croquettes Ingredients
- 1 pound of Broccoli
- 2 ounces of Butter
- 3 slices of Bacon
- 1/2 cup of Parmesan, grated
- 1 Egg
- 2 ounces of Pork Rinds, crushed into crumbs
- 1 teaspoon of Salt
- 2 teaspoons of Pepper
- 1 tablespoon of Flaxseed Meal
- 1 tablespoon of Almond Meal
How To Make Keto Croquettes
- Boil or steam broccoli for 5 minutes, or until tender. Drain well.
- Using a stick blender, blend the warm broccoli with the butter into a puree. Place into a mixing bowl and stir through the grated parmesan, pepper and salt.
- Dice the bacon into small pieces and saute in a non-stick frying pan over a low to medium heat for 6 to 8 minutes. The bacon fat will render whilst the bacon browns, add the bacon and 1 tablespoon of fat to the broccoli and mix well.
- Chill the broccoli and bacon mix for at least 30 minutes.
- Turn your deep fryer to 350F/180C and allow to heat up.
- After the mix has chilled, add the egg and ground up pork rinds and mix well.
- Roll the mixture into 14 small barrel shapes.
- On a plate mix together the almond meal and flaxseed meal, roll each croquette through this dry mix and ensure each side is coated, pressing the mixture onto the surface of the croquette.
- Deep fry your croquettes in batches, ensuring you don’t overcrowd the fryer. They will take around 3-5 minutes, remove when crisp and golden brown. Enjoy!

Can you bake them instead of frying them? If you can what would the oven temperature be and for how long?
Hi Rosie,
I’m not sure they would keep their shape as well when baking. Deep frying seals the breading which helps to keep the shape, the oven will slowly cook the outside which could result is little croquette burger patties. If you want to experiment, I would suggest starting a 200C/390F oven and cooking until crispy and browned. I’d love to know how it goes!
Can you do this this without a deep fryer?

You might want to consider shaping the Croquettes into little patties rather than cylinders and shallow fry. They are quite delicate and may fall apart if they catch on your frying pan. Send us a photo if you decide to try them ๐
