A tasty twist on standard Cauliflower Rice, our Low Carb Coconut Cauliflower Rice adds a soothing element to spicy curries and stir fry dishes. It’s easy to make and tastes just like the authentic Thai side dish, only with less carbs.

We served this tasty Cauliflower Rice with our Ketogenic Pork Vindaloo, it was a little too spicy for my liking, but Matt loved it. If you like a bit of spice, you’ll love the recipe!

Low Carb Coconut Cauliflower Rice Ingredients

  • 3 tablespoons of Coconut Oil
  • 3 tablespoons of Unsweetened Shredded Coconut
  • 14 ounces of Cauliflower Rice
  • 4 ounces of Coconut Cream
  • Pinch of Salt

How to make Low Carb Coconut Cauliflower Rice
  1. Place a non stick frying pan over medium heat, add the coconut oil and allow to heat.
  2. Add the shredded coconut and saute for 1 minute.
  3. Add the cauliflower and saute for 2 minutes, before adding half of the coconut cream.
  4. Continue to cook for 5 minutes before adding the other half of the coconut cream and salt.
  5. Cook, stirring occasionally for another 5-10 minutes, until the cauliflower is cooked through.
  6. Serve garnished with a little toasted coconut.
