This Thai Style Keto Pork Curry in coconut is a beautifully fragrant and mildly spicy dinner dish.
Curry can be the ideal keto meal when made from scratch, but be aware when eating out as most Thai curry sauces contain palm sugar.

Keto Pork Curry Ingredients
- 2 pounds of Pork Butt (Shoulder), diced
- 1 teaspoon of Cumin, ground
- 1 teaspoon of Coriander, ground
- ½ teaspoon of Cinnamon, ground
- ½ teaspoon of Chili Powder
- 2 tablespoons of Coconut Oil
- 1 medium Onion, diced
- 3 cloves of Garlic, crushed
- 1 inch of Ginger, finely sliced
- 14 ounces Coconut Cream
- 1 Lime, zest and juice
- ½ teaspoon of Salt
- ½ pound of Green Beans, cut into 2in lengths
How to Make Keto Pork Curry
- Place the diced pork into a mixing bowl and add the cumin, coriander, cinnamon, and chili powder.
- Mix well and allow the pork to marinate for at least 2 hours, or overnight for best results.
- Place a large saucepan over medium heat and add the coconut oil, onion, garlic, and ginger. Saute for 5 minutes until fragrant.
- Add the marinated pork and cook for 5-7 minutes until evenly colored.
- Pour over the coconut cream and bring to a simmer.
- Simmer for 60-80 minutes, until the pork is tender.
- Add the lime juice, salt, and green beans and cook for another 5 minutes.
- Serve and enjoy.
