How to make Keto Snowball Cookies
  1. Combine all ingredients except the powdered erythritol in a mixing bowl.
  2. Thoroughly mix the ingredients, then use your hands to shape the mixture into a ball.
  3. Divide the dough into roughly 2-tablespoon-sized portions and roll them into round balls.
  4. Sift the powdered erythritol onto a plate and roll each ball until evenly coated.
  5. Your Keto Snowball Cookies are ready to be enjoyed immediately or chilled for later!

Unit Conversion

Ingredients

  • 1 cup Almond Flour
  • 1 cup Unsweetened Desiccated Coconut
  • 3 tablespoons Sugar-Free Maple Syrup
  • 1 teaspoon Vanilla Essence
  • 2 tablespoons Powdered Erythritol

Instructions

  • In a mixing bowl, add all the ingredients except the powdered sweetener.
  • Mix well, then use your hands to bring it together into a ball.
  • Divide the dough into sections that are about the size of 2 tablespoons. Roll and press it round balls – we got 14 balls.
  • Sift the powdered sweetener onto a plate and roll each of the balls in it, until covered.
  • Serve immediately or chill until needed.
