This stuffed pepper recipe makes six servings. One serving is one stuffed pepper (just 6g net carbs), but you can always eat more if you’re hungry!

  • 1 tablespoon of Olive Oil
  • 1 small Onion, diced
  • 2 cloves of Garlic, crushed
  • 1 pound of Ground Beef
  • 2 tablespoons of Cajun Spice
  • 1 teaspoon of Salt
  • ½ teaspoon of Pepper, ground
  • ½ cup of Tomato Passata
  • 1 cup of Cauliflower Rice
  • 6 medium-sized Peppers (Capsicums)
  • 1 cup of Cheddar Cheese, shredded

  1. Prep the oven and peppers: Preheat the oven to 390°F (200°C). Slice the bell peppers’ tops off, remove the seeds and pith, and place them cut-side up in a baking dish.
  2. Cook the filling: Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until softened. Add ground beef, cook until browned, and break it up with a spoon. Stir in Cajun spice, salt, pepper, and tomato passata. Simmer for 5 minutes.
  3. Assemble: Remove skillet from heat and mix in cooked cauliflower rice. Generously fill each bell pepper with the beef mixture and top with shredded cheese.
  4. Bake and enjoy: Bake for 15-20 minutes until the cheese is melted and bubbly and the peppers are tender. Serve immediately and relish every bite!

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic crushed
  • 1 pound ground beef
  • 2 tablespoons cajun spice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper ground
  • 1/2 cup tomato passata
  • 1 cup cauliflower rice
  • 6 medium peppers
  • 1 cup cheddar cheese shredded

Instructions

  • Preheat your oven to 200C/390F.Place a large saucepan over high heat and add the oil, onion, and garlic. Saute until the onion starts to turn translucent.

  • Add the ground beef and saute until browned, then add the cajun spice, salt, pepper, and tomato passata. Mix well.

  • Lower the heat and simmer the mixture for 5 minutes.
  • Remove the pan from the heat, stir through the cauliflower rice and set aside.

  • Prepare the peppers by slicing off the tops and removing the seeds and white pith from the inside. Sit them in a baking dish with the cut sides facing up.

  • Evenly spoons the ground beef mixture between the peppers and top with cheddar cheese.

  • Bake in the oven for 15-20 minutes until the cheese has browned and the peppers are soft.
  • Serve immediately.

      The cauliflower rice is added raw and cooks when added to the meat mixture and also when baked in the oven ๐Ÿ™‚
