Ingredients
1.8poundsCauliflower
3ouncesButter
3.5ouncesCheddar Cheeseshredded
1teaspoonSalt
1/2teaspoonPepper
Instructions
Preheat oven to 200C/390F.
Boil a saucepan two-thirds full of water.
Add the cauliflower and cook for 10 minutes, or until the cauliflower is tender.
1.8 pounds Cauliflower
Drain the cauliflower well then return to the saucepan.
Add the butter. Blend the cauliflower into a puree using a stick blender.
3 ounces Butter
Add half the cheese and blend until melted and mixed through.
3.5 ounces Cheddar Cheese
Add the salt and pepper and blend again.
1 teaspoon Salt, 1/2 teaspoon Pepper
Spoon into a casserole dish and top with the remaining cheddar.
3.5 ounces Cheddar Cheese
Bake for 15-20 minutes, until the cheese is melted and browned.
