Ingredients
Dough
2cupsalmond flour
2tablespoonsmonk fruit
1tablespoonbaking powder
3cupsmozzarella cheese shredded
2ouncescream cheese
2largeeggs
Filling
1/4cupunsalted buttermelted
¼cupbrown monk fruit sweeteneror your preferred natural “brown sugar” sweetener
1tablespooncinnamonground
Frosting
4ouncescream cheesesoftened
1/2cupunsalted buttersoftened
2tablespoonspowdered monk fruitor your preferred powdered sweetener
Melt mozzarella and cream cheese in a pan on the stove over medium heat or in the microwave in 15-second intervals, stirring until mixed, then whisk until smooth.
Combine melted cheeses, eggs, and dry ingredients in a food processor until smooth.

Roll dough and flatten into a rectangle, brush with melted butter and sprinkle with filling ingredients.
1/4 cup unsalted butter, ¼ cup brown monk fruit sweetener, 1 tablespoon cinnamon
Roll into a log, slice into 12 rolls, and place in a greased baking dish.
Bake
Bake at 350°F (180°C) for 20-25 minutes or until golden brown.
Frost And Serve
While the rolls bake, prepare frosting by whisking together the ingredients.
4 ounces cream cheese, 1/2 cup unsalted butter, 2 tablespoons powdered monk fruit
Frost with a spoon or an icing pipe on warm rolls and enjoy!

STORING:Refrigerator: Cinnamon rolls can be stored in the fridge for up to one week in an airtight container.Freezer: You can freeze cinnamon rolls for up to 3 months, they are best stored individually in ziplock bags. Defrost them overnight, then reheat them in the microwave.Reheating: To reheat individual rolls, microwave for 10-15 seconds. If reheating multiple rolls, warm them in the oven or air fryer for 3-5 minutes at a temperature of 180°C or 350°F.
