Soup Ingredients
2tablespoonsOlive Oil
1smallOnionfinely diced
2clovesGarliccrushed
8ouncesMushroomssliced
6cupsChicken Stock
2cupsFresh Spinachchopped

Instructions
Place all the meatball ingredients into a mixing bowl. Mix well.
Roll into tiny meatballs, about the size of 2 teaspoons.
Place the olive oil into the base of a large nonstick saucepan over medium-high heat, add the meatballs and brown.
Remove the browned meatballs from the saucepan and set aside.
Add the onion, garlic, and mushrooms to the saucepan and saute, until the mushrooms have softened.
Add the chicken stock and simmer for 10 minutes.
Return the meatballs to the soup and simmer for 5-10 minutes until cooked through.
Stir through the spinach and remove from the heat. Add salt to taste.
