Ingredients
¼cupWater
0.25ozGelatin
2cupsHeavy Cream
¼cupErythritol
2teaspoonsVanilla Essence
½cupBerriesstrawberries, blueberries, raspberries, to serve
Place the water into a small bowl and sprinkle over the gelatin, leave for 5 minutes to soften.
¼ cup Water, 0.25 oz Gelatin
Place a saucepan over medium heat and add the cream, sweetener and vanilla. Bring to a simmer then remove from the heat.
2 cups Heavy Cream, ¼ cup Erythritol, 2 teaspoons Vanilla Essence
Whisk in the gelatin, until completely dissolved. If your gelatin is not dissolving, place back over the heat and bring to a simmer, but don’t allow the mixture to boil.
Pour the mixture evenly into 4 glasses and refrigerate for 3-4 hours, until set.
Top each panna cotta with a few berries and enjoy!
