2.5ouncesXylitol
2ouncesErythritolgranulated
2scoops MCT Powderunflavored
2teaspoonsVanilla Essence

Instructions
Place 1 cup of the cream into a small saucepan along with all the other ingredients. Whisk together and heat until the sweeteners have dissolved.
Place in the fridge and chill for 30-60 minutes until the mixture is lukewarm to body temperature. Avoid completely chilling as this will set the gelatin.
In a large mixing bowl, add the remaining 2 cups of cream. Whip, using a hand mixer, to firm peaks.
Gently fold in the cooled cream mixture, a small amount at a time, until fully combined.
Pour into a freezer-safe loaf pan that has been lined with parchment paper. Cover and place into the freezer.
Freezing times will depend on the size of the dish and your freezer. We have found that the ice cream in a 9x5in pan reaches a perfect consistency between 8-12 hours of freezing. After this period the ice cream will slowly reach the firmness of regular ice cream, leaving it out for 30 minutes at room temperature will soften it.
For ultimate soft serve experience, remove your ice cream from the freezer and scoop into a piping bag with a star nozzle tip. Pipe into glasses and enjoy!
